is the former name for Tokyo. During the period of control by the Tokugawa Shogunate from 1603 - 1868, Japan's emperors lived in secluded majesty and captivity at the Imperial Palace in .
During the period, culture flourished. The tea ceremony (Sado) and flower arrangement (Ikebana) evolved and became the essence of aesthetics in Japanese life. This sense of aesthetics reached its zenith in Japanese cuisine through Kaiseki, originally a Buddhist monk's approach to eating and serenity, making maximum use of available materials necessitated by scarcity. Today in Japan, even daily dishes are now beautifully prepared and presented.
was first opened at its original location in 1986 in mid-town Toronto, serving authentic Japanese cuisine. Although sushi became the most broadly known and accepted part of the menu, prides itself on its full offering of traditional Japanese flavours done in a contemporary style.
In June of 1998, a second location, , was opened in Forest Hill Village in midtown Toronto, and has developed the same loyal clientele as .
Sushi was introduced to excellent reviews at the Air Canada Centre in 1999, the first in a sports facility. With that knowledge and experience, expanded in 2000 to include the SkyDome.
January 2000 saw move to a larger location at its current address at 484 Eglinton Ave. W., just west of Avenue Road. Designed by Ken and Kazumi Fukushima and Cathy Capes of “ in small packages,” the new location has permitted expansion into full catering, private functions and special events.
EDO also conducts cooking classes, which include the making, history, etiquette and culture of sushi.
